This week’s newsletter is about rest and relaxation, and I wanted a fruit-or-vegetable that matched that vibe. Someone suggested cucumber, and the more I sat with it, the more obvious it became: cucumber is a relaxing food.Cucumber is spa water. Cucumber is the cool crunch in a summer salad on a slow beach day. Cucumber is the classic “eyes closed, exhale” remedy. What I remember is being a kid and finding cucumbers… slippery. The seeds, the texture, the way they didn’t belong next to other foods with wildly different textures. To me, cucumbers barely had any taste at all and that was disturbing. To get cucumbers into my belly, I had a three-stage process: cut them into tiny pieces, pretend there were no seeds, and drown them in dressing.Side note: I had a real aversion to seeds as a child, thanks to my jokester uncle, who also was the most scientific person I knew at the time. My uncle told me to keep observing Grandpa’s belly “for growth.” Eventually I asked Grandpa directly if he knew he had watermelons growing inside him, and the whole family laughed. I did too, eventually.So yes, seeds and I had a complicated relationship. I didn’t start enjoying cucumber until college. I bought a few cucumber-scented products (Bed Bath &amp; Beyond era), tried the classic “cucumber on the eyes” ritual, and then, slowly, I found my way to cucumbers I actually liked eating.
